Romanian Crumble Cake – Grated Cake

Equipment

  • 30x20cm baking tray

Ingredients
  

Dough

  • 250 gr margarine for cakes (or butter)
  • 3 egg yolks
  • 3 tbsp confectioners sugar
  • 3 tbsp sour cream
  • 100 g all purpose flour
  • 80-100 g all purpose flour for kneading

Topping

  • 400 g marmalade or jam
  • 3 egg whites
  • 3 tbsp sugar

Instructions
 

  • Make a fairly hard dough, keep a quarter of it to be grated on top.
  • Spread a sheet, put it in the greased tray.
  • Spread jam and whipped egg whites.
  • Grate the dough on top. You have to mix again this dough with flour or keep it in the freezer to be good for grating.
  • Bake in the preheated oven at 180°C for 35-40 minutes or until nicely browned on top.
