Traditional Romanian BBQ street food – Mititei (Mici)

“Mici” is the most wanted Romanian street food. “Mici” meaning in Romanian language, plural for “small” or ” the small ones”. “Mici” is pronounced as Mich(i) from the word Michigan.

It is eaten as a main dish and usually served in all restaurants, pubs, food trucks, trade shows, festivals. They are also sold (preformed and uncooked) in any super market or butcher shop.

They are in fact barbeque grilled ground meat rolls made from a combination of lamb, pork, beef, and seasonings such as thyme, anise, black pepper, and garlic.
“Mici” are ideally served in a number of 3 – 6 pieces, with french fries, yellow mustard, burger buns and ideally accompanied by a cold beer. Or maybe it’s the other way around, the “mici” are the side dish for the beer? ☺

Ingredients
  

  • 500 gr ground pork at least 20% fat
  • 500 gr ground beef can be substitute with ground pork
  • 500 gr ground lamb can be substitute with ground pork
  • 450 ml broth or stock or mineral water or blonde beer
  • 1 tablespoon salt
  • 1 tablespoon rounded tablespoon paprika
  • 1 teaspoon baking soda
  • 1 teaspoon ground black pepper
  • 1 teaspoon ground coriander+allspice
  • 1 teaspoon dry thyme
  • 10 garlic cloves minced

Instructions
 

  • Check the recipe again and prepare all ingredients;
  • ! All the meat must be at least twice minced.
  • Hand mix all the meat with salt and baking soda, gradually adding the broth ( water / beer )
  • Add all the other spices and minced garlic which was previous diluted in a small cup of water;
  • Mix well the paste, at least 10 minutes;
  • Cover the bowl and let it to cool in the fridge for minimum 6 hours, preferable until next day;
  • With wet hands, form the mititei in a tubular shape, 7 – 8 cm long, 2.5 – 3 cm thick
  • Put them on a very hot grill ( medium temperature) for 3-4 minutes for each of 4 sides.
  • Serve with mustard or ketchup, bread and cold beer!
