Romanian Meatball Sour Soup

This Meatballs Sour Soup is probably the most loved soup in the Romanians menus.

Meatball Sour Soup
 Ingredients:
1 kg of pork bones
 2 large onions
 3 carrots
 1 small celery root 
 2 parsley root
3 tbsp of tomato paste
3 tbsp of paprika paste
 Salt and ground pepper
 ¾ l borscht ( or sauerkraut juice or 4-5 tablespoons of vinegar) 
 Lovage and thyme
 For meatballs 
 500 gr of minced meat
 3 tablespoons of washed rice
 1 whole egg
 1 teaspoon of salt
 Ground pepper
 Dry parsley
 Boil the pork bones in 3 l of water for one hour.
 Sauté the onion for a few minutes. Grate the carrots, celery and parsley and add over onion. Cover and cook for a few minutes on low heat. Add tomato and paprika paste and cook for 1 minute. 
 For meatballs, mix all the ingredients.  You can add a tablespoon of breadcrumbs for a tick texture. Form the balls, smaller than a walnut size. 
 Remove the bones from the pot, add the cooked vegetables, meatballs and let it boil for 30 min. Add salt, pepper, thyme, heated borscht and lovage and boil for another 10-15 min.

Ingredients
  

  • 1 kg pork bone

  • 3 tbsp washed rice
  • 1 whole egg
  • 1 tsp salt
  • ground black pepper
  • dried parsley

Instructions
 

  •  Boil the pork bones in 3 liters of water for one hour.

  • Sauté the onion for a few minutes.
  • Grate the carrots, celery and parsley and add to the onion.
  • Cover and cook for a few minutes on low heat.
  • Add tomato and paprika paste and cook for 1 minute. 
  • For meatballs, mix all the ingredients.
